The holidays came early in Viola with its annual Christmas in the Park held Saturday, Dec. 18.
Approximately 30 children and their parents braved the weather to partake in the hot chocolate, cookies and candy, and a visit with Santa Claus. There was also a chili competition.
“Everyone seemed to be really enjoying themselves,” said Viola Mayor Trent Prater. “I think the weather kept some people away. However, overall, the event was a success.”
Ashley Vandagriff received an early present. She entered her first chili competition and walked away a winner.
“I made white chicken chili for the cook-off,” said Vandagriff. “It’s a very simple recipe. It is very good served with Fritos.”
Ingredients:
4-5 chicken breasts
2 cans of black beans
4 blocks of cream cheese
2 cans Mexicorn
2 cans of Rotel
2-3 cans of chicken broth
3 packs of dry ranch seasoning
Directions:
Cut chicken breasts in half and bake (or boil) until done
Drain all canned items and add everything to large pot
Shred chicken and add to the other ingredients
Let simmer on low for 30 minutes
Second place went to Marshal Scott.
